CHILLI HERB GRILLED WHITING FILLETS

Eastern School whiting fillets, tender, light and tasty with fresh herb dressing.  Serve this up with some charred asparagus and broccolini and brown rice.

INGREDIENTS

Chilli Herb grilled whiting fillets

  • 500g whiting fillets

  • ½ tbsp unsalted butter

  • 2 fresh red chillies, finely diced

  • ¾ bunch flat leaf parsley, finely chopped

  • ¼ bunch coriander, finely chopped

  • 1 small fresh chilli, finely diced

  • 50g capers, roughly chopped

  • 1 lemon, juiced

  • 1 tbsp olive oil

  • Lemon skin, finely sliced

  • Salt and pepper


METHOD

Chilli Herb grilled whiting fillets

  1. Wash the fillets with cold water and pat down with a paper towel.

  2. For the herb mixture, finely chop the parsley, coriander, chilli, capers and lemon skin and place into a small bowl.  Add olive oil, lemon, season with salt and pepper and mixing well.

  3. Place a large frying pan with butter on medium heat. Once the butter begins to heat, place the fish on the pan. Cook on each side for 1-2 minutes.  The time may vary depending on the size of the fillet. Once cooked remove from the pan and season with salt and pepper.

  4. Arrange on a plate and top with the herb mixture. Serve with greens and roasted potatoes.
