Crusted whiting fillets

  • 500g whiting fillets

  • 500g almond meal

  • 2 eggs beaten

  • ¼ bunch flat leaf parsley, finely chopped

  • 1 tbsp parmesan cheese, finely grated

  • ½ tbsp unsalted butter

  • Salt and pepper to season

Crusted whiting fillets

  1. Wash the fillets with cold water and pat down with a paper towel.

  2. In a shallow bowl combine the almond meal, parsley, parmesan cheese, salt and pepper.

  3. In another shallow bowl, combine the beaten egg.

  4. Coat the fish in the egg and then coat it with the dry mix, making sure the fish fillets are firmly coated.

  5. Place a large frying pan with butter on medium heat. Once the butter begins to heat, place the fish on the pan.  Cook on each side for 1-2 minutes, or when brown and crispy.

  6. Remove fillets and place them on a plate. Avoid layering the fillets on top of each other.

  7. Serve with greens and roasted sweet potatoes.
