BBQ KING PRAWNS

Looking for a quick and easy, yet delicious dish to change up your weeknight dinners? Something that feels like you are eating at a restaurant but you get to enjoy in the comfort of your own home?  The wholesome Mediterranean ingredients of these BBQ king prawns marry together to form a melt in your mouth dish and will become your new favourite home cooked meal!

INGREDIENTS

16 green giant king prawns, butterflied and washed

Marinade

  • 3 tbsp olive oil

  • 1 lemon, juice squeezed

  • 1 tsp lemon rind

  • 4 garlic cloves, minced

  • 25g garlic butter (or unsalted butter) softened to room temperature

  • 1 tbsp parmesan cheese, finely grated

  • 1 handful parsley, chopped

  • 1 tsp chilli flakes (optional)

  • Salt and pepper

To serve

  • 1 tbsp parsley leaves to garnish

  • 2 lemons cut into quarters

  • 1 lime cut into quarters

  • Warm crusty sourdough bread topped with olive oil and dukkah

 

METHOD

  1. Turn the BBQ on to high heat.

  2. Wash the prawns with cold water.

  3. Place all the marinade ingredients into a food processor and process until just combined but not over processed.

  4. Place the prawns into a large bowl and pour in ¾ of the marinade, making sure all the prawns are covered.

  5. Refrigerate for 30 minutes.

  6. Lower the BBQ to medium heat and place the prawns on the BBQ shell side down until cooked.  There is no need to flip the prawns.

  7. Baste with remaining marinade to your liking as the prawns are cooking.

  8. Squeeze over a little more lemon, salt and pepper.

  9. Serve the prawns with crusty bread.
