Greek seafood staple, octopus is sure to appear on the menu at any family event. I love the charred flavours of the octopus after it has been soaking in this delightful marinade. Finish this dish off with a drizzling of peppery olive oil, tangy white wine vinegar and lemon for the ultimate Greek dish!

1 kg octopus (washed and tenderised)
½ cup white wine vinegar
4 tbsp olive oil
1 lemon, juiced
2 tbsp olive oil
1 large chilli, finely chopped
1 tsp rosemary
1 tsp oregano
1 tbsp white wine vinegar
1 tsp parsley, finely chopped
1 tsp minced garlic
Salt and pepper to season
1 tbsp parsley leaves to garnish
2 lemons cut into quarters
Turn the BBQ on to high heat.
Mix all the marinade ingredients together in a small bowl, ten place the octopus into a large bowl and pour in 4 tbsp olive oil over the and season with salt and pepper.
Lower the BBQ to medium heat and place the octopus on the BBQ for 25 minutes. Every 5 minutes, alternate between brushing the marinade onto the octopus and drizzling olive oil onto the octopus.
Remove the octopus from the BBQ, place into a baking tray and drizzle olive oil and ½ cup white wine vinegar. Cover with aluminium foil to keep warm.
Garnish and serve with lemon wedges and a cold rice or barley salad.
