GRILLED OCTOPUS

Greek seafood staple, octopus is sure to appear on the menu at any family event.  I love the charred flavours of the octopus after it has been soaking in this delightful marinade. Finish this dish off with a drizzling of peppery olive oil, tangy white wine vinegar and lemon for the ultimate Greek dish!

INGREDIENTS

  • 1 kg octopus (washed and tenderised)

  • ½ cup white wine vinegar

  • 4 tbsp olive oil

  • 1 lemon, juiced

Marinade

  • 2 tbsp olive oil

  • 1 large chilli, finely chopped

  • 1 tsp rosemary

  • 1 tsp oregano

  • 1 tbsp white wine vinegar

  • 1 tsp parsley, finely chopped

  • 1 tsp minced garlic

  • Salt and pepper to season

To serve

  • 1 tbsp parsley leaves to garnish

  • 2 lemons cut into quarters

METHOD

  1. Turn the BBQ on to high heat.

  2. Mix all the marinade ingredients together in a small bowl, ten place the octopus into a large bowl and pour in 4 tbsp olive oil over the and season with salt and pepper.  

  3. Lower the BBQ to medium heat and place the octopus on the BBQ for 25 minutes.  Every 5 minutes, alternate between brushing the marinade onto the octopus and drizzling olive oil onto the octopus.

  4. Remove the octopus from the BBQ, place into a baking tray and drizzle olive oil and ½ cup white wine vinegar. Cover with aluminium foil to keep warm.

  5. Garnish and serve with lemon wedges and a cold rice or barley salad.
