TABOULI

Tabouli is a Mediterranean favourite and in my opinion should be classified as a superfood! All the ingredients are packed with vitamins and minerals.  One of the key ingredients, parsley, has double as much iron as spinach and contains more vitamin C than most vegetables.  It also boosts immunity and cleanses the liver, kidney and gall bladder.  Quinoa, the other key ingredient is packed with fibre and protein and is also high in calcium and iron.

Besides this it tastes delicious and can be eaten with a variety of proteins or on its own with some avocado, hummus and pita bread!

INGREDIENTS

  • 2.5 large bunches of continental parsley, finely chopped

  • 10 mint leaves, finely chopped

  • 3 tomatoes, deseeded and diced

  • 1 cucumber, finely diced

  • ½ red onion, finely diced

  • 1 cup quinoa

  • 1 cube vegetable stock

  • 1 lemon, juiced (or more depending on preference)

  • 3 tbsp olive oil

  • 1 tsp sweet paprika

  • Sea salt to season

  • Pinch of chilli flakes (optional)

 

METHOD

  1. Place one cup of quinoa, 3 cups of water and 1 vegetable stock cube into a saucepan and cook for approximately 15 minutes, stirring frequently.

  2. Once ready remove from the stove and let cool.

  3. Chop the parsley, mint, onion, tomatoes and cucumber and mix through in a large bowl.

  4. Add the cooled quinoa into the bowl, mixing all the ingredients together.

  5. Dress the salad mixture with olive oil, lemon juice and season with salt and paprika.  

  6. Stir  all the ingredients until thoroughly combined

  7. Serve with pita bread and some grilled haloumi and grilled chicken or fish.  Enjoy!
