BLENDER OAT BANANA AND RASPBERRY MUFFINS

They are refined sugar free and kid friendly. A school or work lunchbox snack. Just put it all in the blender and mixture done!


INGREDIENTS

  • 3 ripe bananas mashed

  • 2 cup rolled oats

  • 1/2 cup Greek yogurt

  • 2 eggs lightly beaten

  • 75g unsalted butter, melted

  • 1 tbsp baking powder

  • 2 tsp ground cinnamon

  • 1 tsp vanilla essence

  • 2 tbsp honey (optional)

  • 1/2 cup raspberries

METHOD

  1. Place the oats in the blender and ground them. Add the baking powder, cinnamon, vanilla essence, eggs, butter and honey, and blend.

  2. Fold through the yogurt and banana and blend on low speed.

  3. Remove the mixture and fold in the raspberries.

  4. Place mixture evenly into a muffin tin and top with macadamia nuts or coconut.

  5. Put the muffins in the oven on 180 degrees for 30min. Set aside to cool and enjoy!
