POACHED APPLE PORRIDGE

When I think of porridge, I think warmth, creamy, tasty and delicious all in one mouth full. This recipe is something that embodies all of those words. The tangy poached apple with the warm almond milk and nutty oats, paired with the sweetness of the dates and creaminess of the tahini all in one bowl.

Total time: 25 minutes

INGREDIENTS

  • 1 cup rolled oats

  • 1 apple, peeled

  • 2 large dates

  • 1 tsp cinnamon

  • 1 tbsp mixed nuts and seeds

  • 1 tbsp tahini (each serving to have 1/2 tbsp)

  • 1 1/2 cup almond and coconut milk (or any other milk alternative you desire)


METHOD

  1. Fill one small pan with hot water and place on the stove on medium heat. Add the peeled apple and poach until soft. Once soft remove the apple from the water and set aside. Cut the apple into pieces removing the core.

  2. In the meantime, soak the dates in hot water to allow them to soften.

  3. In a medium deep pan, place 1 cup of rolled oats and 2 cups of almond milk on low heat. Continuously stir the mixture until it becomes creamy. Remove from the stove and separate evenly into 2 bowls. Evenly top with apple, date, cinnamon, nuts and seeds, tahini and pour some extra almond milk on top. Enjoy!
